This chocolate cake is very good for any occasion: Father's day, kids celebration, birthdays, mother's day, chocolate lovers. These super yummy sponge will please kids and grown ups.
Ingredients:
For the sponge:
1. 3 eggs, at room temperature
2. 175 g (6 1/4 oz) self-raising white flour
3. 175 g (6 1/4 oz) unrefined dark muscovado sugar
4. 175 g (6 1/4 oz) unsalted butter
5. 1 1/2 teaspoon baking powder
6. 40 g (1 1/2 oz) cocoa powder
7. 5 tablespoons boiling water
8. 1 jar (400 g) (14.1 oz) Nutella or any chocolate spread, we use to sandwich sponges and apply around cake
For decoration:
1. Chocolate finger biscuits 2 packs x 200 g (7 oz) each
2. Sweets 5 different variations
Method:
1. Preheat the oven to 180C (350F). Grease and line 2 x 20 cm (8 inch) sandwich tins (or use 2 x 20cm (8 inch) spring baking tins)
2. Beat together the eggs, flour, baking powder, sugar and butter until fluffy and fully combined.
In a separate bowl mix the cocoa powder and boiling water to create a paste, then add to the mix. Carefully fold the chocolate paste in with the cake batter until the chocolate has been fully mixed in.
3. Pour out equal quantities of mixture into each tin then bake for about 20-25 minutes or until skewer inserted into center comes out clean. Once baked throughout, leave to cool for a few minutes in the tins, then transfer onto a wire cooling rack.
4. When the cakes has cooled, place first cake onto cake board or serving plate, spread carefully layer of nutella and sandwich together with second cake. Then spread nutella on top and sides of the cake.
5. Stick the chocolate fingers around cake. Divide top of cake into 5 sections, using toothpick, and place 5 chocolate fingers. Fill each section with your favorite sweets.
6. Decorate with ribbon around the cake (this will also help to keep the fingers in place). Makes about 8-10 serves.
